Rhubarb Lider

A perennial plant for field cultivation and forcing. It is cultivated for its long, fleshy, red-green leaf stems of a delicate light pink flesh rich in vitamins C (8–11% of dry matter) and A, and in minerals (phosphorus, potassium, magnesium). A pungent flavour of stems comes from malic and oxalic acids. The leaf stems are used to prepare desserts, cakes and compotes - mainly in spring.
